One thing I've wanted to perfect for a while has been keto low carb pancakes and I think this recipe fits the bill. Top it with some Lakanto Maple Syrup and it's absolutely amazing.
There are a few things I look for in a pancake recipe: fluffy and not unbearably sweet.
You might disagree with that last one but I love topping my pancakes with goodies so having a pancake that's already sweet just creates a too-sweet treat-like meal that isn't really great. If I wanted a dessert I'd make dessert, not breakfast ;).Print
- Mix all ingredients in a bowl and heat a skillet on medium heat.
- Using your utensil of choice (I use a 1/4 cup measuring cup to spoon out the mixture) and pour batter into skillet and allow bubbles to form on pancakes.
- Once bubbles start forming on the top of the pancakes check the bottom and see if it's browned. If it's browned to your liking then flip pancakes over and cook until browned on this side.
- Remove from skillet and serve with butter and Lakanto Maple Syrup and enjoy!
