One thing I’ve wanted to perfect for a while has been keto low carb pancakes and I think this recipe fits the bill. Top it with some Lakanto Maple Syrup and it’s absolutely amazing.
There are a few things I look for in a pancake recipe: fluffy and not unbearably sweet. (I know I’m weird)
You might disagree with that last one but I love topping my pancakes with goodies so having a pancake that’s already sweet just creates a too-sweet treat-like meal that isn’t really great.
If I wanted a dessert I’d make dessert, not breakfast ;).
I have avoided making keto pancakes for quite some time despite my kids’ best efforts at getting me to eat pancakes with them.
Using coconut flour just didn’t seem appetizing to me, and I couldn’t figure out how to make almond flour work like wheat flour without being too grainy.
After giving it a shot though, I’m surprised at how these turned out.
My Low Carb Keto Pancakes
One morning the kids basically begged me to make pancakes and eat with them for breakfast (I am usually intermittent fasting until lunch). One little eye batting session from my daughter and I caved – y’all know how it is.
After a few attempts, and dumped out batter later I finally settled on this recipe.
This even passed the “husband test” of my not keto husband. That was surprising to me.
So, if you’re wanting to try a pancake recipe and are looking for something yummy and pancake-like these are the thing for you.
If you want a little more sweetness to your pancake then add about a tsp or more of sugar and you’ll be golden.
You can probably add a hint of vanilla too ;).
