One thing my son will request every morning if he could is my homemade pancakes! And, it’s one thing I love obliging on when he asks.
It’s basically become a thing now in our house where our son will call things “mom’s famous [insert recipe here]” or “dad’s famous [insert recipe here]” when he wants us to make something. He’s caught on to the fact that we’ll smile or laugh and tell him yes.
So, when he realllyyy wants pancakes he starts to butter me up to the idea of making pancakes that morning.
That or oatmeal… those are the ones he’ll usually try to butter me up to make.
But, these pancakes are basically so simple that I have gotten to the point where it’s from memory. And, there is usually none leftover either.
I’ve often wondered if there are other kids that manage to butter their parents up in order to get the food they want.
Easy Homemade Pancakes Your Kids Will Love
This recipe is super easy to make and easy to double or even triple so you can add some to the freezer.
That’s what I do when I have extra time… I’ll make a big batch to stash in the freezer for mornings where I have less time to make a full batch.
What’s even better is you can top these with just about any type of topping that your heart desires.
You can go plain jane and just have syrup or go all out.

I’m pretty plain jane when it comes to pancakes, but I know other people like to get creative!
- 1 cup All-Purpose flour
- 1 tablespoon Lakanto Classic Monkfruit Sweetener
- 2 teaspoons Baking Powder
- 1 teaspoon salt
- 1 cup Milk
- 2 tablespoons Butter
- 1 large Egg
- 1 tablespoon Coconut oil
- extra Coconut oil for cooking
- Add your dry ingredients to a large mixing bowl. Melt your butter and coconut oil together.
- Add all wet ingredients to the dry ingredients and mix well. (feel free to add a bit more milk if you feel your mix is too thick)
- Heat a pan over medium to medium-high heat and melt coconut oil in the pan
- Using a 1/3 cup measuring cup, ladle out the pancake batter into the pan cooking on the first side until you see bubbles forming on the top. Flip over and cook an additional minute or until golden brown.
- Finish with the remaining batter and then serve.
- Top with whatever toppings you'd like!
